Can it Be? Healthy Chocolate Chip Cookies

In honor of bathing suit season, a dessert that won't pack on the pounds.

 

I've said it before, one of my favorite things about cooking is exploring new recipes and trying things I wouldn't normally eat - this includes super healthy desserts.

My philosophy has always been to splurge on desserts and never cut corners. My grandmother Loretta and I used to joke that chocolate was healthy because it had dairy, or apple pie was good for you because it had apples in it.

Now that I am older, and admittedly plumper, I am trying to create a healthy lifestyle. While I am dedicated to eating better, I don't want to give up the sweets that I enjoy so much. So, i've decided to start looking for healthier alternatives for some of my favorite desserts.

I've started by trying a Weight Watchers recipe, that I've adapted to my taste, for chocolate chip cookies. I have to admit, they aren't bad. In fact, I dare say they are surprisingly good. If all health food tastes like these cookies, I might be able to stick to this healthier lifestyle.

To make this recipe you'll need the following:

  • 1/2 cup of quick cooking oats (not instant)
  • 1 cup of whole wheat flour
  • 1/2 teaspoon of baking soda
  • 1/4 teaspoon of salt
  • 4 tablespoons of unsalted butter, melted and cooled
  • 3/4 cup of packed light brown sugar
  • 1 large egg
  • 1 teaspoon of vanilla extract
  • 3/4 cup of chocolate chips
