Today kicks off a three-day Good Eats bonanza. In light of Christmas, I will be giving you three cookie recipes, one a day, that you can make with the kids just in time for Santa's highly anticipated arrival.
Today, I bring you my grandmother Loretta's incredible Skillet Cookies. Like the name implies, these cookies are made in a single skillet. This recipe is easy, a great way to get kids involved and it will require minimal clean up.
Ever since I can remember my Dad, Dave, has looked forward to the annual Meier Christmas cookie weekend, just waiting for the opportunity to snag as many of my grandma's skillet cookies as he can. They are a childhood favorite of his and my grandma makes them like no one else.
For this recipe you will need the following:
- 1 stick of butter, melted
- 1 egg well beaten
- 1 cup of sugar
- 1 cup of finely chopped dates
- 2 3/4 cups of rice krispies
- 1 cup of chopped pecans
- 1 teaspoon of vanilla
- 1 bag of coconut

These ingredients all mixed together in a cookie sound great. Nice pictures. Actual written instructions would be helpful. Also no mention of when the sugar and vanilla are added to the skillet but I think I can figure these steps out on my own. Thanks, will try. Nice that they are gluten free also.

Thanks for pointing that out! These were done last year prior to when we started including the instructions at the bottom. If you'd like I can email it all to you so you can print it. These are a very near and dear favorite cookie in our family, even more so now that my grandmother (pictured here) passed away earlier this year. She made these to perfection every year :)

I had the recipe nearby so I figured I'd just put the instructions here:
Melt the butter in a skillet, add the eggs, sugar and dates. Once the sugar is dissolved into the mix, add the cereal nuts and vanilla. Mix together. Remove the skillet from the heat and begin to roll fingerfulls of the mix into balls. Roll the balls into the coconut and let cool. Enjoy!!
