Once the sugar is at the right temperature add it to the egg whites as shown here, this a crucial step.

My mother Colleen's divinity is another Christmas treat that's been passed down for generations. While it's easy to make, the directions must be followed exactly or this temperamental candy won't turn out right.

"I am always afraid to make it," my Mom told me. "My grandmother Flossie was good at making it and I am always scared it won't turn out right."

Don't be discouraged by this. Practice makes perfect and when you make this recipe right, it is divine. Besides, you can't argue with a sweet candy that has hardly any calories and no fat, especially at Christmas time.

Because this candy is so sensitive, I recommend scrolling through the photo gallery and video first, before attempting to start. To make this recipe you will need the following:

  • 2 1/2 cups of sugar
  • 1/2 cup of light-colored corn syrup
  • 2 egg whites
  • 1 teaspoon vanilla
  • 1 or two drops of food coloring (if you want to make them festive)
  • 1 bag of whole Pecans
  • Waxed paper
  • A candy thermometer with a clip
