A Hungry Man's Quiche

The perfect recipe for brunch.

A few weeks ago I purchased a wonderful new cookbook from one of my favorite local stores, Fragments in Highland. The book The Old Farmer's Everyday Cookbook Almanac has an assortment of great recipes.

This past weekend, for Mother's Day, I made brunch at my parents house. Included in the mid-morning feast was a recipe from my new book - a hungry man's quiche.

I slightly altered the recipe, including more of the ingredients I knew my family enjoyed, and I added some salt and pepper. It was a huge hit. An entire quiche was gobbled up by my parents and two siblings in less than 10 minutes.

To make this recipe you will need the following:

  • 1 unbaked (9 1/2-inch) deep-dish pie shell
  • 4 small potatoes, mashed
  • 1/2 cup of cubed cooked ham
  • 2 cups of shredded cheddar cheese
  • 5 large eggs
  • 1 cup of milk
  • Salt and pepper to taste
