A Summer Pasta Salad

Looking for a light meal to make on a hot day? I've got the perfect recipe.

I'm going to be honest, I have no idea what the official name for this pasta salad is. All I know is that my mom has made it for as long as I can remember, and it's one of my all-time favorite dishes.

While the combination of pasta, mayonnaise, chicken and grapes might sound weird - I promise you it's amazing. I've yet to meet a person who didn't like this salad.

I had the pleasure of making it this past weekend for my best friend Tera's bachelorette party. The next day, my fiance and I enjoyed eating the leftovers.

For me, this dish screams summer. It's something you make, throw in the fridge, and then can pull out and snack on at any time. It's not a heavy dish, but it's filling and full of flavor.

Like some of my mom's other recipes, this one has no measurements. I eyeball everything and make it to taste. If you have a small family you can cut this recipe in half. Because it's so popular, I always make a large serving.

To make this recipe, you'll need the following:

  • 1 whole chicken, boiled until thoroughly cooked
  • 1 large bag of seedless grapes (green or red)
  • 1 large jar of mayonnaise
  • 2 boxes of medium sized shell pasta
