An Irish Dish for St. Patrick's Day

Looking for a festive dish? Try this beef with Guinness.

I love St. Patrick's Day, and not for the obvious reason. While I do enjoy a nice Guinness, I love the Irish food more. St. Patrick's Day is the perfect day to experiment with some authentic Irish cooking, whether it's an Irish stew, soda bread or corned beef and cabbage.

This year I went to the White Lake Library and found an authentic Irish cookbook with a delicious recipe for beef with Guinness. The meal is just how it sounds—beef steeped in Guinness with vegetables, and served with boiled potatoes.

This is a nice one-pot meal that you can quickly throw together. It's not only incredibly flavorful, but it makes your home smell amazing.

To make this recipe, you need the following:

  • 2 tbsp. all-purpose flour
  • salt and pepper
  • 2 lbs. stew beef
  • 2 tbsp. lard
  • 2 onions sliced
  • 4 carrots sliced
  • 2/3 cup Guinness
  • 2/3 cup water
  • 1 tbsp. fresh chopped parsley
  • 1 lb. fingerling potatoes
  • 2 tbsp. butter
