Coq Au Riesling

This chicken and pasta recipe produces prodigious amounts of delicious food.

Growing up, my younger sister, Brittney, and I watched a ridiculous amount of Nigella Lawson on the Food Network. For the hour her show, Nigella Bites, was on, we would sit transfixed in front of the television, watching as Lawson cooked an endless amount of delicious food.

Lawson not only made good food, but she had a British accent we loved to listen to. We were enamored by Lawson, who was incredibly beautiful yet didn't seem to care if people watched her eat three fried chocolate bars on television. What was so amazing about Lawson was that she loved food and she wasn't afraid to be open about how passionate she was about it.

This past weekend I stopped by the to browse the cookbook section. I was surprised to find hundreds of books that ranged from healthy cooking to cake decorating. Among those books was Lawson's Nigella Express. Without hesitation, I grabbed it and immediately started scouring the pages to find a recipe to make.

What I found was an incredible but easy dish called Coq Au Riesling. It's a twist on the classic French dish usually made with red wine called Coq Au Vin. I warn you now: This recipe makes a lot of food. My fiance, Brian, and I invited friends over to eat and still had ample leftovers at the end of the night after helping ourselves to seconds.

To make this recipe you'll need the following:

  • 1 cup bacon, cubed
  • 1 leek, finely sliced
  • 12 skinless chicken thighs
  • 3 bay leaves
  • 10 oz. oyster mushrooms torn into strips (4 cups)
  • 1 bottle Riesling
  • Salt and freshly ground black pepper
  • 1 to 2 tbsp. freshly chopped dill leaves
  • Buttered noodles, optional
