Easter Brunch: Hash Brown Egg Nests

If you need something simple to make for Easter brunch, try this quick and easy recipe for hash brown egg nests.

The great thing about Easter brunch recipes is that they often give you a chance to play with your food and be creative. You can either make a decadent french toast casserole, or deviled eggs that look like hatching eggs with baby chicks.

You can also make one of my favorite desserts: birds' nests. It really all depends on how much time you have and how creative you want to be. If you are in a pinch and need a quick recipe for Easter brunch, I suggest trying this recipe for hash brown egg nests. They are festive (the hash browns form a nest looking structure that holds the eggs and meat), and they are a great side to serve with the rest of your meal.

To make this recipe you'll need the following:

  • Olive oil spray
  • 1/2 c. minced onion
  • 1 c. shredded potatoes (you can buy these prepackaged)
  • dash of garlic powder
  • salt and pepper to taste
  • 1 c. egg whites or egg beaters, beaten
  • 2 tbsp diced onions
  • 1/4 c. diced bell peppers
  • 1/4 c. shredded cheddar cheese
  • 1/4 c. ham, diced
  • dash of garlic powder
  • salt and pepper to taste

To start, preheat oven to 375 degrees, then lightly spray a muffin tin with oil spray. This recipe normally makes 6 nests, but I stretched mine to make 10 smaller nests. Combine the potatoes, 1/2 cup onion, garlic powder, salt and pepper. Fill each muffin tin with 1/4 cup of potatoes and press along the side of the tin so that it forms a nest. Bake 35 minutes or until golden brown and edges are crispy. While the nests are baking, combine the egg whites with remaining ingredients in a medium bowl. Remove the pan from the oven when nests are golden brown. Fill each nest with about 3 tablespoons of egg mixture. Return the pan with the nests to the oven and bake an additional 17-20 minutes or until eggs are fully cooked. Enjoy!
