Recipe: Maple Sausage Pancake Muffins

Make breakfast fun with these quick and easy muffins.

It seems that all of my friends have pinned one version or another of pancake muffins on Pinterest, so this week I decided to try my own recipe.

The great thing about pancake muffins is that you can put whatever filling you want in them, whether it's blueberries, bananas or chocolate chips. I decided to try mine with sausage.

In addition, I used pancake mix (where you just add the water) to make the pancakes instead of making them from scratch.

This recipe makes 12 muffins, and can be served with butter and syrup.

To make this you'll need:

  • 1 package of 10.6 oz shake and pour pancake mix
  • 1 package of maple breakfast sausage links

To start, preheat the oven to 350 degrees. Grease a muffin tin and set aside. In a small skillet, cook the sausage. Once cooked, remove from the sausage from the pan and chop into bite-size pieces. Next, make the pancake mix as directed and pour into the muffin tin, filling each slot 3/4 full. Then place 2-3 pieces of sausage into the tins. If you decide to use a different filling, you can add it now. Bake until golden brown (approximately 15-20 minutes). Serve warm with your favorite topping. Enjoy!
