Start Your Morning with Overnight Scrambled Egg Bake

This healthy breakfast recipe is a great way to start your day. Mix it together the night before and cook for 1 hour in the morning.

According to many studies and reports, breakfast is the most important meal of the day – yet so many people skip it.

Start your day off right with this recipe for overnight scrambled egg bake. This recipe is made with low-fat cheese and egg substitute which lightens it up.

  • 15 oz fat-free egg substitute  
  • 12 oz fat-free evaporated milk  
  • 6 slices white bread, or potato bread  
  • 6 oz extra-lean ham, 5% fat, cubed  
  • 1 cup(s) low-fat, shredded Cheddar cheese  

To start, coat a 9 x 13-inch baking pan with cooking spray. Beat eggs in a large bowl and add the evaporated milk. Next, place the bread on the bottom of baking pan, it will overlap. Toss the ham and cheese over the bread. Pour the egg mixture over the top. Cover with foil and refrigerate overnight.

In the morning bake the covered egg mixture at 350°F for 45 minutes. Remove the tin foil and bake for an additional 15 minutes. Cut into 8 portions and serve warm with salt and pepper to taste. Enjoy!
